Chicken Pot Pie Recipe

Y'all are gonna love this Cheddar Biscuit Chicken Pot Pie! With creamy chicken, tender veggies, and a golden, cheesy biscuit topping, it’s packed with flavor thanks to our own special poultry seasoning. This pot pie is as easy to make as it is delicious. It’s got everything you crave in a chicken pot pie, and then some!

Ingredients:

  • 4 cups chicken, shredded or cubed
  • 2 cups celery, chopped
  • 2 cups carrots, chopped
  • 1 yellow onion, chopped
  • 3 tablespoons butter
  • 1/4 cup flour
  • 3.5 teaspoons Runnin' Wild Poultry Seasoning
  • 1/4 teaspoon salt
  • 2 cups chicken broth
  • 1 cup heavy cream

For the Cheddar Biscuit Topping

  • 1 box Cheddar Bay Biscuit Mix
  • 3/4 cup milk
  • 1/2 cup sharp cheddar cheese, shredded
  • 1/4 cup butter, melted

Instructions:

  1. Preheat the oven to 375˚F.
  2. Mix up the biscuit topping by combining the Cheddar Bay biscuit mix with milk and cheese. Stir it together just until there are no dry spots. Be sure to set the seasoning packet aside for later.
  3. To make the chicken pot pie filling, heat a large skillet over medium heat. Add the celery, carrots, onion, and 3 tablespoons of butter. Cook, stirring now and then, for about 4-5 minutes, or until the veggies begin to soften.
  4. Sprinkle the flour, Runnin' Wild Poultry Seasoning, and salt over the veggies and stir it all together. Cook for about 60-90 seconds.
  5. Stir in the chicken broth and heavy cream, then bring it to a simmer. Let it simmer for 2-3 minutes, or until the mixture thickens enough to coat the back of a spoon. Next, stir in the shredded chicken. If your skillet’s oven-safe, you can move on to the next step. If not, just transfer the chicken pot pie filling to a casserole dish.
  6. Spoon the biscuit mix in heaping dollops over the top of the chicken pot pie. Bake for 14-18 minutes, or until the edges are bubbly and the biscuits are fully cooked.
  7. Melt the 1/4 cup butter in the microwave or on the stovetop. Stir in the seasoning packet from the biscuits, then brush the seasoned butter over the top of the pot pie. Enjoy!
